Ingredients

  • 1 tsp baking powder
  • 1 tsp baking soda
  • ยพ tsp salt
  • ยผ tsp cinnamon
  • ยผ tsp ginger
  • ยผ tsp nutmeg
  • ยพ cup vegetable oil (180 ml)
  • ยฝ cup sugar (100g)
  • โ…“ cup brown sugar (67g)
  • 2 large eggs (room temp)
  • 1 tsp vanilla
  • ยฝ cup chopped pecans (60g)
  • 2 cups grated carrots (225g)
  • ๐™๐™ค๐™ง ๐™ฉ๐™๐™š ๐™๐™ง๐™ค๐™จ๐™ฉ๐™ž๐™ฃ๐™œ:
  • 8 oz cream cheese
  • ยฝ cup butter (113g)
  • pinch of salt
  • 6 cups powdered sugar (720g)
  • 1 tsp vanilla

INSTRUCTIONS

  • Preheat oven to 350ยฐF and line a muffin pan.

  • Mix dry ingredients in one bowl.

  • In another bowl, whisk oil, sugars, eggs, and vanilla.

  • Combine wet + dry, then fold in carrots and pecans.

  • Fill liners (ยพ full) and bake 17โ€“20 mins. Let cool.

  • Beat cream cheese, butter, and salt until smooth.

  • Add powdered sugar gradually, then vanilla.

  • Beat until light and fluffy.
