PAUL JOSEPH’S PEACH AND ARUGULA SALAD WITH PECANS

Our very own Paul Joseph brought this delicious Peach Arugula Salad with Pecans to our Valdosta, GA offices and shared it with the entire team. It was a complete success and everyone loved its flavor and freshness, we asked him for the recipe and we want to share it with you.

Ingredients
  • ½ Cup Olive Oil
  • ¼ Cup Balsamic Or Champagne Vinegar
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Honey
  • ½ Shallot, Minced
  • 1 Clove Garlic, Minced
  • ¼ Cup Chopped Fresh Basil
  • 1 Tbs Chopped Fresh Thyme
  • Salt and Pepper to Taste
  • Chili Flakes to Taste (Optional)
  • Arugula
  • 2-3 Fresh Peaches, Sliced Or Diced
  • ½ Cup Fresh Pitted Cherries, Rough Chopped
  • Fresh Basil, Chopped
  • Fresh Mozzarella, Feta, Or Burrata Cheese
  • Toasted Pecans

INSTRUCTIONS

  • Combine all the liquid ingredients with the chilli flakes, thyme, basil and garlic to create a vinaigrette. Season with salt and pepper.

  • In a large bowl toss Peaches and Cherries with 1/3 dressing and allow to rest 10-15 minutes. Arrange Arugula in the bottom of bowl. Top with Fruit, Cheese, Basil, and Pecans. Drizzle with more dressing if desired.
